Does anyone have a good recipe for Tiramisu?  I've never attempted it before but I have a craving after eating it out at a restaurant. 

(for what it's worth my baking/cooking skill level is fairly high, and complicated recipes don't intimidate me)

I've made this recipe several times and it's always turned out delicious: http://www.epicurious.com/recipes/food/views/Tiramisu-107833 It's pretty simple, though from experience I'll warn that you really do have to be careful with the folding if you don't want it to get goopy.

...now I'm craving tiramisu.

Here is one from a course my wife and I took with a Cordon Blue chef. One of our friends (who was at the course with us) made this as a surprise for her birthday recently.

3 egg yolks
1/2 Cup sugar
1 Cup Marscapone cheese
1 Cup Whipping cream (at least 35%)

1) Whip cream in to soft peaks
2) Whisk egg yolks with sugar until light yellow
3) Fold 1/3 of cream into yolks and mix
4) Fold cream-yolk mixture into remaining yolks
5) Fold in Marscapone cheese.

Dip for biscuits:
3 to 4 Cups cold strong coffee
1/2 Cup Kahlua or Frangelico
1/4 Cup sugar

1) Mix coffee with Kahlua to taste (Kahlua flavour should just be present but not overpowering)
2) Might need to add up to 1/4 cup sugar, but not so much that the flavour is masked.

Construction (just before serving):
Savoyardi biscuits
Cocoa powder

1) Spread a layer of filling on a plate
2) Briefly dip each biscuit into dip and arrange as a layer
3) Cover with more filling
4) Repeat 1) to 3)
5) Use a sieve to dust top with cocoa powder
